This is one salad I really love. I can substitute an entire meal with multiple helpings of this.

- Bell peppers ( Red, Yellow and Green) - 1 each
- Baby Corn - 2-3
- Sweet Corn - 1 tbsp.
- Broccoli - 15-20 small florets
- Olives (gutted and sliced) - 1 tbsp.
- Fresh Basil leaves ( optional) - 5-6 (finely chopped)
- Olive oil - 1 tbsp.
- Italian seasoning (oregano, basil, chilli flakes, thyme, etc.)
- Salt - as per taste
Procedure:
- Cut the bell peppers and baby corn into 2 inch long thin strips.
- In a pan, heat olive oil, add in the peppers, baby corn, corn, broccoli and saute for 2-3 minutes.
- Add the basil leaves and olives.
- Add salt and seasoning as required and serve.
