Tomato bhath using Red rice
Ingredients:
- Red Rice - 1.5 cups
- Tomatoes - 2 large (chopped)
- Onion - 1 large (chopped long)
- Oil - 3-4 tsp.
- Jeera - 1/2 tsp.
- Bay leaf - 1
- Cinnamon bark - 1 inch piece broken into 2
- Cloves - 2
- Ginger- garlic paste - 1 tsp.
- Green chillies - 2
- Salt - to taste
Procedure:
- Heat oil in a pressure pan. Add the cumin seeds, bay-leaf, cloves, cinnamon, ginger-garlic paste, and saute.
- Add the chopped onions and green chillies and fry for 2-3 minutes.
- Add the chopped tomatoes and saute further for 2-3 minutes.
- Add the red rice and stir well.
- Add around 3 cups of water and salt as per taste.
- Cover with lid, put the weight on and wait for 2 whistles and switch off.
- Serve with raita.
